Ingredients:

2 cups of white or brown rice

1 bag of frozen vegetable (peas & carrots mix)

1 large onion

1/4 cup of grapeseed oil or vegetable oil

Spices as you like, 1 tea spoon of each or to your preferrence:

  • salt & pepper

  • Cumin

  • cinnamon

  • curry powder

  • 21 seasoning salute (Trader Joe's) u can substitute w Sazon packet

1 Rotesserie Chicken or u can make whole chicken at home 

 

How-To

  1. Dice and sautee onion in oil in a large (rice) pot 

  2. Add the frozen vegetables and let them cook for 10-15 minutes

  3. Add the spices listed above to taste or about a tea spoon of each except the salt, add more (3 teaspoons)

  4. stir the veges and spices together, 

  5. Add 2 cups of rice & follow the rice instructions on the bag... For brown basmati rice, you need 4 1/2 cups of water.... for Regular white rice, you need 4 cups of water... Cover pot 

  6. on High heat wait for the water to boil, then turn the heat on stove down to low (2) stir them together and keep covered for about 45 minutes or till rice is cooked! some rice cook faster than others so keep checking after 30 minutes and give it a stir. 

  7. After it is cooked leave it in pot for 15 minutes to simmer and then place it in a deep serving dish and add the rotesserie chicken by breaking it into peices and place it on top of the rice and sprinkle cinnamon for taste
