Eggplant Dishes
Eggplant with chick peas

Peal the eggplant using a potato pealer, then cut into large cubes, add grape seed oil and salt then place in a pan to bake in oven till browned…. about 45 minutes

When they are fully cooked and browned, take out of oven

on stove top, sautee 1 large onion with 1 pound can of chick peas in grape seed oil and salt to taste

Add Browned eggplant to sautés onions & chick peas

After 10 minutes, add Marinara sauce,OR tomato & basil sauce with 3/4 jar of water and stir till it comes to a boil, then turn to medium heat for 10 or 15 more minutes!

Ingredients: 2-3 large black eggplants 1 large onion 1 lb pf chick peas 1 jar of marinara sauce

1 jar of tomato sauce
salt to taste
How-To:

Peal and large cube the eggplants then place them on a pan with grapeseed oil and salt and put in the oven on 400 degrees till they brown for approx 45 minutes.... flip them over to brown both sides equally

On stove top sautee onion and chick peas in grapeseed oil , then add the browned eggplant and mix for 10 minutes

Add the marinara sauce and 3/4 jar of water and salt and bring to boil, then lower the heat to medium for 10 more minutes.

let it cool, then place it in your favorite deep dish & Bon Appetite!
Baba Ganouge

Stab it around then grill it or put it in oven to cook….oven on 400 degrees for 1/2 hour or until it is cooked… more eggplants the longer you leave then in oven or on grill

After it is cooked, take out and cut the ends and peal the skin and only use the mashed inside… then mash it with the mortar & pestle and add mashed garlic salt, lemon and olive oil and mix well

Add diced tomatoes and scallions to the mashed eggplant with garlic lemon and olive oil dressing

After mixing all ingredients in the bowl, transport to your serving dish and add parsley and olive oil on top for garnish
