Minestrone Soup

Ingredients:

1 large onion
-
Cloves of garlic (minced)
-
2 stems of celery
-
2 fresh carrots
-
1 fresh zucchini
-
2 ripe tomatoes
-
1 can of chick peas
-
1 jar of marinara sauce
-
1 frozen bag of cheese tortellini pasta
-
salt/pepper/basil/parsely
-
1 cup of chicken broth
-
Parmesean cheese
-
Vegetable or grape seed oil
How To:
-
In a soup pot, put vegetable oil & chopped onion on medium high heat for 4 minutes

Add minced garlic
-
Add chopped carrots, celery, zucchini till it is soft (10 min)

Add salt, pepper, basil, & parsely

Wash and chop tomatoes and add to pot

Mix all in and then after a couple of minutes add the chicken both

Add the washed can of chick peas
-
mix it in then add tomato sauce and 1/2 cup of water
-
Put temp on High and bring the soup to a boil, then turn to medium low and add Pasta
-
Stir it up and taste it, if all is good, wait for pasta to cook and then turn heat off

Serve in a bowl with parmesean cheese on top
